what are ideal dimensions for a projection booth. assume two projectors along with all other required work stations and storage. can a wider booth make up for lack of depth?

As big as you can get
Most electrical codes require 3 feet of clear space in front of electrical panels and behind the projection equipment

I agree with Gordon that designing in a little extra space won't hurt. It's likely that in the transition to Digital Cinema, you may need a film projector and a digital projector side-by-side. Some theatres have made the terrible mistake of taking out their film projector to install a digital projector, and then found a lack of digital product left them with nothing to play:
