Quick question, maybe a stupid question...
How is per cap calculated? Is it as simple as total concession sales / patrons? Is it net or gross? Are costs accounted for?
We're trying to figure out what a national per cap average of say, $3.25, means for us. If costs are not accounted for, what are those average costs for concessions as a percentage of sales? I imagine tax is not accounted for.
If it matters, we'll be serving beer, wine, coffee in addition to popcorn, candy and soda.
