I don't think it would sell much. One customer "insisting" you carry a certain product doesn't mean that you should. If you want to satisfy the one customer, or the few, who are looking for air popped corn, you might try what my wife does. Don't know if it's exactly "air popped", but she puts a little popcorn in a brown paper bag without any oil, folds the top of the bag down a couple of times, and staples it shut. She puts it in the microwave and pops it. It works fine.
As for holding it, I wouldn't bother. I would pop it to order with the small number of orders I would expect to receive. If you see a greater need, you could pop a few ahead and leave them in your warmer to keep them warm and fresh. Of course, you would probably want to transfer the popcorn from the brown bag to your regular bag or bucket before you put it in the warmer or serve.
It tastes about like it sounds... plain as can be.
